Good Evening everyone..
Spring is here in New Brunswick or kind of..
Although it is still quite cool and we had a heavy frost last night..
Had to bring in our hanging pots and tomato plants and then put them out again to be rained on today..
Nevertheless it is Spring and everything is turning green and beautiful..
Terry and I went for a drive and took a pic of that beautiful scene above..
He used to work there in those fields when he was a teenager and whenever I would get a chance to have the car I would drive by hoping I would see him.. grin..
Actually, we were looking for violets as I want to make my salves again...
In the meantime I am in the process of making some Dandelion Lotion Bars..
This is a pin I found on Pinterest and they seem to be an easy thing to make..

It tastes just like honey and is very good for you..
We were back out to the farm for a day again..
We are trying to get as many days as possible there before we move to the cottage for the Summer..
So pretty up there with the choke cherry trees all in blossom and the grass turning green..
Don't you love Spring..
I guess here in Canada our warm weather is so scarce that we Canadians kind of obsess about it all.. sorry... smile..
Terry picked some rhubarb and I made jam..
So love cooking in Aunt Eva's old kitchen.. smile..
I think this is our favorite after strawberry...
Do you like rhubarb jams?
This is a Rhubarb and Pineapple one..
Here is my recipe..
Rhubarb Pineapple Jam..
6 cups of chopped rhubarb
5 cups of white sugar
Bring to a boil and then turn down heat and simmer until tender..
(about 25 minutes)
Then add a 19 ounce can of crushed pineapple...
2 small packages of strawberry jello..
Stir well and heat for a few more minutes..
Pour into sterilized jars and seal..
You can keep this in your fridge but I find if it seals it keeps in our cold room for a year at least...
Sometimes I add 2 cups of fresh crushed strawberries ...
