After that chat with Achu Kurian, I decided to have a look at her autographed book through the eyes of a novice, aspiring baker, page by page. What I read and saw fascinated me.
A lot of thought has gone into every aspect of CAKES, DESSERTS AND MORE (CDAM).
In the first page (after the introduction), CDAM has tips to make the perfect cake. I like.
Is it in grams? I wonder. Because those put me off. Completely. The only measures I own are spoons, cups and dollops of instinct. I check the first recipe: spoons and cups. I approve.
CDAM has sections and is not all about baking. There are elements of frying, freezing, boiling, roasting, layering, etc. One section demystifies icing. The different kinds, how to make them, but first, how to make your cake ready to be iced J
Here are two recipes from CDAM. They are among my favourites and quite easy ;)
Chocolate biscuit delight
(for 8 to 10 servings)
Ingredients
Butter for greasing an 8” round glass dish
Powdered sugar 1 ½ cups
Cocoa powder 4 tbsp
Unsalted butter ½ cup
Egg, lightly beaten 1
Vanilla essence 1 tsp
Digestive biscuits 200 gms
Milk ½ cup
Method
· Lightly grease an 8” round glass dish with butter. Set aside
· Sift the sugar and cocoa into a pan
· Melt the butter in a heavy based pan over low heat and pour it into the sugar and cocoa mix
· Add the egg and mix well
· Cook over gentle heat for 1 minute, stirring all the while
· Remove from heat and stir in the vanilla essence
· Spread about 2 tbsp of the chocolate sauce over the base of the prepared glass dish
· Divide biscuits and sauce into four portions each
· Dip the biscuits in milk and arrange them in the bowl. Fill the spaces between the biscuits with broken biscuits
· Pour one portion of the chocolate sauce over the biscuits
· Continue layering, ending with the chocolate sauce
· Chill in the freezer for 3 – 4 hours
· Remove from freezer and refrigerate till ready to serve.
Chilli cheese toast
(for 40 pieces)
Ingredients
Butter to grease baking tray
Bread 10 slices
Butter 1/3 cup
For topping:
Processed cheddar cheese, grated, 1 ½ cup
Green chillies, minced, 6
Onion, minced, ½ cup
Red capsicum, chopped, ¼ cup
Coriander leaves, minced, ¼ cup
Salt, ½ tspn or to taste
To serve:
Tomato sauce
Method
· Preheat oven to 150*C or 300*F for 5 minutes
· Lightly grease a baking tray with butter. Set aside
· Remove and discard the crust of the bread slices
· Butter the slices and cut them into 4 pieces each
· Mix all the topping ingredients in a bowl
· Spread the toppings over the bread pieces
· Place the pieces in the prepared baking tray
· Bake in the centre of the pre-heated oven for 10 minutes
· Dot with tomato sauce and serve
